I wish there was a good story behind this meatloaf but really it’s just the version I’ve settled on over the years. My recipe has one important change from others I’ve tried, and it’s a small but important one- I saute my onions in butter to mellow the flavor. The result is something that doesn’t take long to make, but tastes better than most. Add my recipe for mashed potatoes, and you’ve got a simple but filling weeknight dinner.

Prep time – 20 minutes / Cook time – 40 minutes

  • 1 medium onion, chopped fine
  • 2 T. butter
  • 1 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 2/3 C. plain bread crumbs
  • 1/4 ketchup + extra for glaze
  • 1 egg, slightly beaten
  • 2 t. parsley
  • 1 t. garlic powder
  • 1 t. onion powder
  • 2 t. Worcestershire sauce
  • 1/2 t. salt
  • 1/4 t. ground black pepper
Preheat oven to 375 degrees. In sauce pan over medium heat, melt butter, saute onions until soft, about 8-10 minutes. Set aside to cool. Line a rimmed baking sheet with aluminum foil. Place a rack in baking sheet. In a large bowl, combine ground beef, ground pork, bread crumbs, egg, ketchup, parsley, garlic powder, onion powder, Worcestershire sauce, salt, pepper and cooled onions.
Mix until just combined. Don’t over-mix or loaves will be too dense. Shape meat mixture into 4 separate loaves, place on rack. Brush with ketchup. Bake loaves for 40 minutes or until thermometer reads 160 degrees.
Let cool 10 minutes before slicing.
