This is a modified version of something we used to eat at the local breakfast diner. It was called “John’s Mess” and had these same ingredients of eggs, hash browns and chopped pieces of ham, but added peppers and onions. It was as tasty as it was high in calories, which is why we stopped going to that diner. Now, it’s a slightly simplified version that is a guilty pleasure every once in a while for weekend breakfasts.
