This is what I usually make on Saturday mornings to prep breakfast for the week. Just nuke ‘em for 40 seconds or so and they are good to go.

Prep time – 10 minutes / Cook time – 15 minutes

  • 9 eggs
  • ½ c. milk
  • 1 ½ c. chopped Canadian bacon
  • 1 c. shredded cheddar cheese
  • Salt and pepper to taste
Preheat oven to 375. Liberally coat a muffin pan with non-stick cooking spray. In a large bowl mix eggs, milk, salt and pepper. Whisk until thoroughly combined and frothy. Divide Canadian bacon and cheese evenly in each muffin cup. Pour egg mixture into each cup until about ⅔ full. Bake for 12 – 15 minutes or until the center of each cup is firm.
