After I couldn’t find a decent peanut granola at the grocery store I started tinkering with ratios to make one with a decent peanut flavor, but not overly sweet. You can substitute honey roasted peanuts for a sweeter taste or add mini chocolate chips once the granola has completely cooled. Enjoy sprinkled over vanilla Greek yogurt for breakfast or nibble on the big clusters for a snack.

Prep Time – 20 mins / Cook Time 20 mins

  • ½ c. honey
  • 1 c. smooth peanut butter
  • 1 t. Vanilla
  • 3 c. old fashioned oats
  • 2 c. roasted, salted peanuts
  • ½ t. Kosher salt

Preheat oven to 300. Line a large baking sheet with foil. Measure honey and peanut butter into large bowl and microwave for 1 minute on 80% power, until peanut butter is softened. Add vanilla and whisk until combined. Add oats, peanuts and salt, stir until oats are coated in honey mixture. Spread mixture on a baking sheet and bake for 20 minutes. Let cool for 15 minutes and store in airtight container.
