Skirt steak is a hit or miss kind of dish. Often times the meat comes out chewy and not tender. It can be a workout for your jaw to make it through your serving. But I’ve found that by using this marinade, and a heaping helping of time, this version of skirt steak is one of the most delicious dinners we eat. So much so, my daughter has decided it’s her annual birthday dinner meal without question.

Prep time – 9 hours / Cook time – 20 minutes

  • 1/4 C. vegetable oil
  • 3/4 C. soy sauce
  • 2 T. Worcestershire sauce
  • 2 T. Balsamic vinegar
  • 1/2 C. water
  • 1/4 C. brown sugar
  • 4 garlic cloves, chopped
  • 1 onion, chopped
  • 2 t. garlic powder
  • 2 t. onion powder
  • 1 t. freshly ground pepper
  • 3 lbs. skirt steak
Marinade-
Take all ingredients listed and whisk them together in a medium bowl. Add skirt steak to glass baking dish or gallon sized Ziploc bag and pour marinade over meat. Leave in refrigerator for 8-9 hours, turning meat in marinade occasionally.
Grill on medium/high for approximately 7-8 minutes per side. Slice into 1/4″ wide strips and serve.
