This isn’t so much a recipe as it is a good use of extra meat from my beef enchilada recipe. As far as nachos go, it’s fairly standard, but the meat on top of this mix is what makes it taste so good. Try them during football season sometime and I bet it doesn’t last very long in a crowd.

Prep time – 10 minutes / Cook time 10 minutes

  • enchilada beef mixture
  • restaurant style tortilla chips
  • 1/2 c. Chihuahua Cheese
  • fresh pico de gallo
  • 1/4 c. sour cream
  • guacamole (your choice and optional)

Preheat oven to 375 degrees.

Place 1 layer of chips in oven-proof dish. Layer half of beef mixture over chips. Cover with 2nd layer of chips and remaining beef mixture. Sprinkle cheese over top, bake in oven for 10 minutes or until cheese is melted. Remove from oven and add pico de gallo and dollops of sour cream. Serve to hungry crowd.
