Looking for an easy meal on a lazy Sunday I just threw some ingreidents in a bowl and mixed up this marinade. The orange juice and soy sauce are strong flavors that gives the chicken a good flavor and keeps it moist. The pineapple adds just the right amount of sweetness. If there had been any leftovers I would have added the chicken pieces to my salad for Monday’s lunch — oh well, living with two teenagers means there is rarely anything left over.
Prep Time – 3 hours / Cook Time 12 minutes
- 1 c. Teriyaki sauce
- 1/4 c. Soy source
- 1/4 c. Olive oil
- 1/4 c. Orange juice
- 1/4 c. water
- 1 T. Parsley
- 2 t. Garlic powder
- 2 t. Onion powder
- 1 t. Ground black pepper
- 2 boneless skinless chicken breasts
- 1 1/2 c. Pineapple cubed
- 1 medium red onion cut in chunks
Combine teriyaki sauce, soy sauce, olive oil, orange juice, water, parsley, garlic powder, onion powder, and black pepper in a small bowl. Cut chicken and onion into small chunks. Make pineapple the same size chunks. Thread chicken, onion and pineapple on skewers being sure not pack them too tight so they cook through. Place all of the skewers in a casserole dish that they can lay flat. Pour marinade over chicken, cover and refrigerate for 3 hours. Turn skewers half way through to make sure all sides are covered in marinade. Preheat grill to medium and place a aluminum foil or grill pan on grate. Cook skewers 12 minutes, turning to make sure all sides get cooked.
